Easter Cupcakes

First off, I hope everyone had a wonderful Easter weekend. I sure did. I spent my Easter with the people that matter the most. You are never too old for an Easter Basket, even at 20 right? My parents didn't think so because I'm the youngest of 4 daughters and my parents hid all of our baskets. Trying to find my basket brought back so many good memories. This year my basket wasn't filled with chocolate and candy. It was so much better!


This year my basket was a colorful bag with a cupcake puzzle, a perfect cupcake braclet and some other tools for decorating. It was my own basket of "dreams".

Speaking of cupcakes I made the perfect cupcakes to go along with our family Easter. Carrot cake is an obvious pick for Easter cupcakes. But i found a recipe to add a twist to the typical carrot cake. I got so excited to try it out when I found it. I made Banana Carrot cupcakes topped off with Coconut Cream Cheese frosting; decorating the top of the cupcake to look like a nest for the festive theme of Easter, toasted coconut with whooper eggs.

Blueberry Raspberry Cream Cheese Cupcakes

It's almost that sweet summer time!! I have the perfect cupcake for you this summer. A fruity concoction that will make you beg for another. Blueberry Raspberry Cream Cheese Cupcakes. I made the batter with real blueberries and raspberries. I topped the cupcake off with flavored cream cheese icing. The white you see in the picture above is just normal cream cheese icing, the red you see is raspberry flavored cream cheese icing, and lastly the blue you see is blueberry flavored cream cheese icing. Run for the Roses Bridal Shower

Good Evening and Happy Wednesday!! I had a high school friend approach me a little while back to make her sister's bridal shower cupcakes. Her sister attended Kentucky University, where she met her   Fiancé .  After they get married they will be moving back to Kentucky. As you probably collected Kentucky has a BIG part of their relationship.  The bride’s sister wanted to somehow incorporate Kentucky into the cupcakes for the bridal shower.  We made Run for the Roses mini cupcakes to add a creative twist to the bridal shower. She requested mini cupcakes so they are easy to grab and go. The other thought was it wouldn’t be too messy for the women who 'dressed up for the derby". We loved this idea! The flavors that she requested were Mocha Cupcakes with Vanilla Buttercream Frosting and Strawberry Cupcakes with Vanilla Buttercream Frosting . With the frosting piped and colored to look like roses. These cupcakes turned out simple and classy....
